Baileys rocky road recipe

One of the things I really love about Christmas is the food and drink that you only ever seem to have at this time of year.

For me, it’s tins of Roses and Quality Streets, the biscuits from Marks and Spencer that are more chocolate than biscuit (it actually says that on the box which I think is brilliant!), my chocolate ginger bites, bacon-wrapped-cheese, mulled wine, and Baileys.

Oh I do love Baileys.  I’ve got 3 different types in the fridge at the moment. Don’t judge me!

And possibly even better than drinking it, is adding it to recipes.

Here’s one of my favourites – Baileys rocky road.

Here’s what you’ll need:

  • 200g dark chocolate, chopped
  • 100g condensed milk
  • 50ml Baileys
  • 25g butter
  • 75g chocolate (white, milk or dark, whatever you fancy), chopped
  • 75g digestive biscuits
  • 100g mini marshmallows
  • 50g raisins

And here’s what you do:

  1. Prepare a tin by lining it with greaseproof paper.
  2. Crush up your digestive biscuits.  Either by putting them in a bag and bashing them with a rolling pin, or by putting them in a bowl and crushing them with the end of a rolling pin.
  3. Melt the chocolate, condensed milk, Baileys and butter together.  You can do this in a bowl over a pan of simmering water, or do what I do and just gently heat it all together in a pan until it melts.  Just make sure you keep stirring it while it melts.
  4. Take the pan off the heat and let the mix cool a little bit.
  5. Stir in the crushed biscuits, chopped white chocolate, marshmallows and raisins.
  6. Press the mixture into your prepared tin.
  7. Leave it to set.
  8. Cut up and enjoy.
  9. If you want to you can melt some more white chocolate and drizzle it over the top, or dust the rocky road pieces with icing sugar to make it a bit more festive!

And it tastes so nice.  I find it really hard to stop after just one piece of this stuff.

But that’s fine, it’s Christmas after all!

Enjoying bathtime with Radox for kids

Bathtime is a big part of our bedtime routine.

We’re quite lucky I think, in that our children have pretty much always liked being in the bath.  I mean, look at that happy face!  That’s the face of a little boy enjoying bathtime!

These days what we do is pop a load of bath toys in with them and they have a splash and a play together.  I just think it’s a lovely way to end the day.

And with Rhys often coming home from school covered in mud, a bath before bed is pretty necessary!

So when we were asked to try out some new bath products from Radox we were all quite excited.  Especially when the children saw that they were special Frozen products.

We’re still pretty big Frozen fans in this house!

We were sent some shampoo and conditioner, bath and body wash and some handwash to try out.  All from the new range from Radox kids.  There are also Star Wars items available, if your children are more into that than Frozen.

The shampoo and the body wash that we’ve been trying out both have a really lovely soft rose scent.  The children both smell so nice and clean after we’ve used it, and the smell lingers on Nerys’ hair which I really like.

The products are all super gentle on children’s skin too which is fab.

All the products in the range come in these bottles with pump action tops which I think is just brilliant.  As silly as it sounds, it really does make life so much easier, rather than messing around picking bottles up and taking tops off.

What I really like though, is the fact that the pump action is nice and smooth.  You know how on some bottles they can be a bit stiff to use?  These work so well that Nerys can do it herself.

Which is especially good when it comes to the handwash.

See, she loves to wash her hands.

And before I would have to help her every 30 seconds to put more soap on her hands.  Now, she can just do it herself.  Although now I have to keep watching to make sure she doesn’t just use the whole bottle up!

We’re really enjoying using the Radox products at bathtime.  They all smell amazing, and with them being by Radox I really feel like I can trust that they’re good for my children’s skin.

And the children themselves love seeing their favourite Frozen characters every evening!

You need to be in the race

A few months back I was sat on a train with a copy of Cosmopolitan, and I started reading the note from the editor that you always get at the front of the magazine.

She was talking about how she was training for a marathon (I think that’s what it was), and how hard it can be to keep going with training and planning for the race when you feel like you’re not good enough.

Then she wrote this:

“There will always be those faster, smarter and hungrier than you, but if you don’t push past the fear of failing, you’ll never know what you’re truly capable of.  Because part of the secret of success is being in the race in the first place”.

I just thought it was such good advice.

Not just for runners, but for everyone.  It’s pretty good advice for life in general, isn’t it?

If there’s something in life you want to do, just get in the race.  By all means look around at the other people who are already doing the thing you want to do.  Admire their success.  Be inspired by their drive.  Just don’t let them put you off.

Don’t worry that you’re not as good as them at the start.  Even the top people in their field were beginners at one point.

Don’t stop before you’ve even started.  You’ll never know how good you might have been if you never try.

Just get in the race!

Living arrows 49/52

 

After struggling a bit to find a photo for last week’s Living Arrows post, I was determined to get out with my family and my camera at least once this week to get some good shots to chose from!

And on Saturday morning we all headed out to Brynmill park for a blast of fresh air and a run around.  Rhys and Steve went on a mission to hunt down some Pokemon, while Nerys and I walked round to the playpark.

She had a great time on the swings and the slides, and even braved the fireman’s pole, although she’s not quite mastered the technique for that yet!

When it was time to head home we all met up again, and I tried to get some photos of Rhys.  But, Nerys was feeling cheeky and kept jumping in front of him.  So I got several photos like this.  Look at that little glint in her eye.  And the look on her long-suffering brother’s face behind her.  He’s so patient with her at times, it’s unreal!

Books for Christmas

A rather exciting parcel arrived the other day.  It was a big blue envelope, with sparkly silver snowflakes on it.  And the words ‘Merry Christmas’ written in swirly silver script.

So what was inside this lovely packaging?  Books!

I knew I wanted to put them away for something special in the run up to Christmas, so I had to quickly hide them away from Nerys.  If she had her way we’d have read them there and then.  She loves books.  Both my children do.  They take ages every night at bedtime choosing which book they want to have read to them.

I had been thinking about doing a book advent calendar for them this year.  I’ve seen a few posts from people doing it and it looks like a lovely idea.  But I just wasn’t organised enough to get it done, and I’m not sure if 24 new books might be a bit too much!

What I’m planning instead, is a sort of Christmas week box.  Like the Christmas eve boxes you see people making, but with items in it to be opened over the course of the week leading up to Christmas.  I’m thinking a book for each night of that week.  And new pyjamas.  And some activity/sticker books.  You get the idea.  It won’t be anything too extravagant, just some bits and pieces to keep the children occupied in that week leading up to Christmas.  There’ll be a post about it on here soon I’m sure!

What I’d like to do is have a mixture of themes for the books for our Christmas week box.  So these books that arrived from BritMums and Penguin random house are a great start.

There is a Christmas themed one, but it’s a rather silly take on the theme.  The copy of ‘The dinosaur that pooped Christmas’ that we’ve got is a mini version of the best-selling book about a boy called Danny and his dinosaur who, well, poops Christmas!  It’s very silly.  As are the rest of the ‘dinosaur that pooped..’ books.  But my 2 really enjoy them, and I know they’ll love this one too.

We’ve also got ‘Max and bird’ which I hadn’t heard of before it arrived in the post.  It’s about a cat called Max, who can’t decide if he’d like to be friends with bird, or if he’d like to  chase and maybe eat him.  I have a feeling there’ll be a nice message about friendship at the end of that story.  I hope so anyway!

The last book we were sent is ‘The little elephant who wants to fall asleep’.  I’m really quite excited about this one.  It’s the latest book from the author of the rather famous ‘The rabbit who wants to fall asleep’.  This is the book that caused a bit of a stir after parents reported that it really does help their children fall asleep.  I think this might be one to save for Christmas eve, when I might need all the help I can get to send my children off to sleep!

I’d like to add at least one more Christmas book to the mix, maybe a nice one which tells the nativity story, or one about being with family and friends at this time of year.  And then maybe a couple that I remember from my childhood.

We’ve been reading ‘Each, peach, pear, plum’ a lot lately which I love because I remember it from when I was little.  I might get a nice Alfie and Annie Rose book to add to the Christmas week box too, I was a big fan of those stories as a child as well.

I’ve still got copies of some of my favourite childhood books, and I’m looking forward to passing them on to my children when they get a bit older.  I have a very battered copy of ‘the owl who was afraid of the dark’, which I might start reading to Rhys soon actually.  Then, in a few years time, I would love him to read ‘goodnight Mr Tom’ and ‘back home’.  I read and re-read those books so many times when I was younger.  They’re just beautifully written books, and they both make me cry every time I read them which is a sign of a really good book to me!

Right now I’m still working my way through the first book in the ‘song of ice and fire’ series, but will be asking my husband for the second book soon.

Chocolate ginger bites recipe

One thing I look forward to every December is making up a batch of these chocolate ginger bites.  They’ve become a really tasty festive tradition for me!

And they are really easy to make too.

Here’s what you’ll need:

  • 300g ginger nut biscuits
  • 300g plain chocolate
  • 100g butter
  • 100g golden syrup

And here’s what you do:

  1. Prepare a baking tin (20x30cm if you have one that size), by lining it with greaseproof paper/baking parchment.
  2. Crush the ginger nut biscuits.  You can either put them all in a bag (make sure you can seal it well!) and then bash them with a rolling pin, or tip them in a bowl and break them up using something like the end of a rolling pin.  Either way, you want to break them up into quite small pieces but there’s no need to be too fussy about it.
  3. Melt the chocolate, butter and golden syrup.  I tend to just put all three ingredients in a pan, on the hob, and heat them gently while stirring.  But you can also do it by putting the ingredients in a bowl over a pan of simmering water.
  4. Once the chocolate, butter and golden syrup are all melted and mixed together, take off the heat and stir in the crushed ginger nuts.
  5. Tip all the mixture into your tin and press it down with the back of a wooden spoon.
  6. Pop it in the fridge to set.  Try to leave it for a couple of hours if you can, so it sets properly.
  7. Take out of the tin and cut into squares.
  8. Enjoy!

Liked and loved – November 2016

It’s funny, I went to write this post of things I’ve liked and loved in November and at first couldn’t think of much to include.

It feels like it was just a pretty quiet month.

But then I really started to think about it and realised that actually, there have been quite a few lovely things about the past month.  That’s why I love writing these kinds of posts, they force me to reflect, focus and remember all the good things in life!

So, here are some things that have made me happy in November.

Visiting the Grape and Olive in Swansea marina.

A few weeks back I went along to a blogger and press event at the Grape and Olive restaurant at the top of the tower in Swansea’s marina.  It was a really lovely evening, meeting other local bloggers and getting to sample the delicious festive menu.

I would definitely recommend it to anyone looking for somewhere a bit special to go for some great food.  If you want to read more about the festive menu you can go and read my full blog post about my evening at the Grape and Olive.

 

Watching the Swansea firework display with my family.

Every year there’s a huge firework display at St Helen’s in Swansea on Guy Fawkes night.  And this year we bought tickets for us and Steve’s parents to go down and watch them.  We all wrapped up warm in hats and gloves.  Nana and Pops treated the kids to a light up sword and fairy wand to wave around.  And we got to watch their little faces as they watched this huge, amazing firework display for the first time.  That’s a memory I’ll always treasure.

I’m not sure I need to say much more about this one.  If you’ve not tried it, go out and get some.  And add a big splash to a cup of coffee.  So, so good.

Listening to the children practice their songs for their Christmas concerts.

I knew Rhys would be doing a Christmas concert this year.  What I didn’t realise is that, with Nerys in the nursery attached to his school, she would be doing one too!  So for the past few weeks we’ve been treated to them practicing their songs at home.  And one morning I woke up to the sound of Rhys teaching one of his songs to Nerys.  Not a bad way to start the day.

 

Gilmore girls revival on Netflix.

I’d waited for this for months and months.  And then the day it was released on Netflix I waited for hours and hours for the children to go to bed so I could settle down and watch it in peace!  For some reason though, I hadn’t realised that each episode was an hour and a half long.  Still, I made it through the first 3 episodes in one, long sitting.  And watched the last one as soon as I could the next day.

What can I say.

I loved it.  Every second.  I know it’s a bit weird to say about a tv programme, but it felt like being back home.  Everything was just so cosy and familiar.  I think I’ve made my peace with the last 4 words too, even if my immediate reaction was ‘what?  seriously, what?!’

Now, it’s back to series one again I think.  Time to start the journey all over again.
