We’ve been doing a fair bit of baking around here recently. After watching a certain episode of Something Special, Rhys has been asking to make carrot cakes, which did make me smile considering he’s never tasted them before.
We made a batch last week using a recipe I found online that tasted good but just didn’t really rise. So we tried a new recipe yesterday and they came out so much better! I’m going to have a play around with the recipe I think, adding some raisins and maybe some apple, and will try and post the final recipe next week.
But for now, I present you with one of our lovely, well-risen carrot cakes – Yummy!

Yummy looking cake. I don’t think I’ve had a carrot cake without the topping. I think I’d prefer it. My children are at the age where they are baking by themselves. Lots of experimenting going on. #AlphabetPhoto
The recipe did include a cream cheese frosting, but we didn’t have enough cream cheese so left them plain! They’re really yummy like this! Sounds like there’s lots of baking fun that goes on in your house! x
We generally bake cupcakes or muffins when we’re baking together, and then the kids like to decorate them 🙂 Nice and messy! Your carrot cake looks very yummy xx
The decorating is often the best part as far as the kids are concerned! We do make fairy cakes a lot for that very reason! x
